This is a book that was published in 1860, I have a facsimile copy and this is where I found the fabulous examples of red work.

Here's a book recommendation for the pen flourishings :
"The Analysis of Pen Flourishing in 13th Century Manuscripts" by Sonia Scott-Fleming, E.J. Brill, 1989 ISBN 90-04--08351-0

It breaks the various elements down into units and compares english to french style pen flourishings
